Atlantic Shores residents enjoying the mealFor residents at the Atlantic Shores retirement community in Virginia Beach, it’s become an annual event that is anticipated all year long. Through a longstanding partnership, ECPI University’s College of Culinary Arts, Culinary Institute of Virginia, stages a student competition where dozens of senior “foodies” serve as judges, and then award scholarships.

This year’s theme: Create healthy “food truck” signature dishes. Billed as the “April Fool’s Truck” Competition, seven teams of students entered with $2,000 in scholarship money going to the top three teams.

winning dish in the culinary competitionAfter tireless tastings, there was a tie for first place between Team Seasoned – Lindon Clanton and Laurette Clarke – and its Bahn Mi Taco, and Team Beach Wraps – Timothy Allen, Victoria Silver, and Porscha Williams – and its entry, Sweet Potato Wraps.

Winners were selected based on creativity, appearance, presentation, flavor, and execution of each dish.  Congratulations to all the worthy contestants!
